    Eating Your Way Through Los Cabos: A Baja Food Guide

    Baja California Sur might be Mexico's most quietly exciting food region: the sea hands you shellfish and dorado, the desert farms hand you tomatoes and herbs that taste like they mean it, and a generation of chefs treats both with respect. You can eat spectacularly here on any budget — if you know the categories.

    Street level: tacos and mariscos

    The fish taco was arguably perfected in Baja: battered, crisp, dressed with cabbage, crema, and salsa from squeeze bottles. In Cabo San Lucas, walk the stands around Calle Narciso Mendoza; in San José, follow locals at lunchtime. Order two, watch what the regulars add, order three more.

    Marisquerías — casual seafood counters — are the local weekend ritual. Aguachile, ceviche tostadas, chocolate clams from Loreto: bright, cold, unbeatable at noon.

    The farm-to-table belt

    In the Ánimas Bajas countryside outside San José, restaurants grow their menus on-site and serve under mesquite trees and string lights. These dinners — slow, seasonal, unreasonably romantic — are the region's signature experience. Book ahead; they're small and beloved.

    Baja-Med and the new wave

    The region's fine dining fuses Mexican ingredients with Mediterranean and Japanese technique — locally shorthanded as Baja-Med. Add the arrival of destination dining rooms at Ánima Village and the new-resort wave, and 2026 is a genuinely exciting year to eat here.

    Drink like a local
